As I mentioned in my 2017 financial goals post, I am planning to stay within budget for the whole year, which includes my notorious food budget. To help myself out on this fairly ambitious goal of mine, I’m going back to an old, money-saving favorite of mine: the slow cooker. As a mini-goal, I plan to make at least one slow cooking meal per week…for the whole year. -that’ll be 52 recipes for those of you playing at home.
Before we get to the recipes, I wanted to share my machine of choice. In case anyone is in the market for a nice, decent, money-saving simpleton, this one is great (& cheap):
Weekly Slow Cooking Recipes
- Lentil Soup from Pinch of Yum (I also added some cumin and curry powder to mine for a little kick)
- Baked Ziti from Build Your Bite (This made for some seriously jealous coworkers at lunchtime)
- Creamy Chicken, Stuffing & Green Beans from Family Fresh Meals (Boyfriend-very-much-approved)
- Sausage & Peppers with pasta from Iowa Girl Eats (Yummmmmmmmmmmmy)
- Stuffed Bell Peppers from Damn Delicious (Always a crowd fav)
- Broccoli, Chicken, & Rice Casserole from Kristine’s Kitchen (This one is SUPER easy & delicious)
- Cabbage Rolls from Paleo Grubs (Serving over rice since this recipe omits it)
- Buffalo Ranch Chicken Tenders from Slow Cooker Gourmet (I’m serving with lots o’ roasted veggies for dipping into extra sauce.) Note: I’ve made this 2 more times already.
- Teriyaki Chicken & Veggies from New Leaf Wellness (Again, serving with rice. This one is easily frozen ahead of time!)
- Chili Mac & Cheese from Countryside Cravings (New recipe for me but it was good!)
- Garlic Parmesan Chicken & Potatoes from Damn Delicious (So simple, easily customized to your favorite flavors.)
- Chicken Burrito Bowls from No. 2 Pencil (Easy & satisfying)
- Beef Bolognese Sauce from Vikalinka (No one will ever give you a hard time for not making your own sauce again.)
- Beef & Potato Au Gratin from The Magical Slow Cooker (simple, easy, yes)
- Breakfast Casserole from Stockpiling Moms (I did ‘breakfast for dinner’ so just check the temp. settings if making overnight)
- Taco Pasta Bake from Family Fresh Meals
- Shepherd’s Pie from Yellow Bliss Road (minus the mushrooms because yuck)
- Tomato Basil Soup from Little Spice Jar (Very similar to Panera’s but healthier)
- Asian Chicken Lettuce Wraps from Cooking Classy
- BBQ Pulled Pork from Natasha’s Kitchen (Made this for the beach – it was a big hit during lunch)
- Chicken Parm Pasta from Damn Delicious (Not as good as the original, but much easier to make!)
